Today, I decided to try something new. Well actually it's a spin on something old, good ol' fashioned grits. Most people call these grits cakes but that sounds a little bit unappetizing - any suggestions?? To put a mainstream twist on it you could switch up the grits with polenta or any other variety of grits (grits-like grain).

Southern Fried Grits Cakes
-Make three to six servings of Grits
-Add 1 cup of shredded cheese and bacon/chicken
- Refrigerate in a sprayed baking pan for one hour to thicken consistency
- Using a cookie cutter, cut out circles of grits
- lightly dust the cakes with flour
- dip them in a buttermilk and then into generously seasoned flour (completes the batter)
- fry them in a skillet for 3 to 5 minutes on medium high heat
- let them rest on paper towel to get rid of excess oil
- Serve with your favorite sauce and enjoy

Easy right!
